Ingredients:

• 4 zucchini
• 4 large potatoes
• 4 ripe tomatoes
• 4 cloves garlic
• 2 tbs mint (finely chopped)
• 2 tbs chopped basil
• 2 tbs parsley (finely chopped)
• 1 cup of olive oil
• 1 cup of water
• salt
• freshly ground pepper
Directions:
