• 1 octopus approximately 1 1/2 kg
• 1 cup. Virgin Olive Oil
• 1 cup. white vinegar
• 1 cup. dry white wine
• 1 bay leaf
• 5-6 motes black pepper
• 1 tbsp oregano
Place the octopus in a pot. The drizzle with the olive oil, vinegar and wine. Pour into the bay leaf and pepper and let boil over medium heat for 40 minutes or until softened (depending on how well is the octopus battered).
2. When softened, remove to a platter. As its still hot, sprinkle with oregano. Once cool, cut into bite-sized pieces.
3. Put it in a glass dish and pour 3/4 cup ofolive oil and 1/4 cup of vinegar. Mix carefully and keep it in the refrigerator.
4. When serving it, pour some raw olive oil and a few drops of vinegar.
